- 2 pound(s) Boneless, Skinless Chicken Breast
- 0.25 teaspoon(s) Cumin
- 1 teaspoon(s) Salt
- 0.25 teaspoon(s) Pepper
- 0.25 teaspoon(s) Garlic Powder
- 1 cup(s) Cilantro
- 2 Garlic Cloves
- 2 Jalapeno Peppers
- 2 Limes (Juiced)
- 3 Medium Tomatoes
Fresca Chicken Directions
- Preheat over to 375 F.
- Place chicken in a large baking dish and sprinkle evenly with cumin, garlic, salt and pepper.
- Finely chop ingredients for Pico de Gallo, cilantro, garlic cloves, jalapenos (remove seeds), and tomatoes. Mix in a bowl and add lime zest and lime juice.
- Cover chicken in Pico de Gallo mix.
- Bake on middle rack for 35-45 mins or until chicken is cooked.
- Garnish with cilantro and serve hot with your favorite side dish. (Pictured is Cilantro Lime Cauliflower Rice.)
